Choose a flat, dense piece of meat (as for boiled pork). On the meat, make cross cuts, not cutting to the end.
Mix the ingredients for the marinade and grease the meat from all sides and in the cuts, add salt and pepper to taste. Leave the meat to marinate for 10-12 hours.
Slice the cheese and tomatoes into rings, chop the garlic. Add cheese, tomatoes and garlic to each incision. If desired, add mushrooms.
Wrap the meat in foil, place on a baking sheet and place in the preheated oven to 180-200 C and bake until tender for 50-60 minutes.
