peach cobbler Recipe

4 15oz cans sliced peaches

2 cups sugar

1/2 stick butter

1 teaspoon cinnamon

1/4 teaspoon vanilla

Tablespoon brown sugar

1 1/2 cups Self rising flour

1 1/2 cups Milk

1 Tablespoon Cornstarch

1/4 cup water

Preheat oven to 375°

Mix flour, milk, 1/2 teaspoon cinnamon and 1 cup sugar in a bowl. It should be the consistency of pancake batter.

Add half of the butter to a glass baking dish and allow to melt in oven.

Mix peaches with 1 cup sugar, vanilla, 1/2 teaspoon cinnamon and remaining butter (melted)

In a small bowl whisk together a heaping tablespoon of cornstarch with 1/4 cup water and add to the peach mixture.

Pour the batter into the baking dish then gently spoon in the peaches along with some of the juices. (Use your discretion as to how much of the liquid you want to add)

Mix tablespoon brown sugar with a pinch of cinnamon and sprinkle a little over the top (optional)

Bake at 375 for about 40 – 45 minutes

Best served with a gigantic scoop of vanilla ice cream.
